CELERY AND ONION SAUTE

Ingredients
2 tablespoons unsalted butter
1 bunch celery, cut 1inch pieces
1 tablespoons cornstarch
1 cups vegetable broth
1 Tablespoon dried herbs
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons dried parsley
1 medium onion, thinly sliced
Directions:

Melt the butter in a heavy 12 inch skillet over moderate heat.

Add the celery and onion and saute, stirring occasionally for 3 minutes or until crisp tender.

In a small bowl, whisk together the cornstarch, dried herbs and vegetable broth until smooth and add to the skillet.

Bring to a boil, stirring.

Reduce the heat to moderately low.

Simmer, stirring occasionally for 15 minutes.


Try adding mustard too.
