TURKEY LOAF PEPPER RINGS

My version of turkey loaf
Bell peppers cut into rings
Grated cheese of your choice

Set the bell pepper rings on a baking sheet.
Fill each with a mound of turkey loaf mixture.
Bake in pre-heated oven (175 C or 350 F) for about 25 minutes.
Top with grated cheese and bake an additional 5 minutes to melt cheese.

YUMMY TUNA CASSEROLE

  • Pasta to make about 1 1/2 cups when cooked
  • 1 Small Carrot chopped and steamed
  • 1/2 Bell Pepper chopped
  • 1/2 Onion sliced into thin rings (or chopped)
  • 1 small zucchini chopped
  • 1 can tuna
  • 1/2 cup mayonnaise
  • 1/3 cup yogurt (or sour cream)
  • 1 cup shredded cheese
  • 1/3 cup seasoned bread crumbs


  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Bring a large pot of salted water to a boil, add pasta, and cook until al dente; drain.
  3. Mix all ingredients. topping with cheese then bread crumbs.
  4. Bake uncovered for 25-30 minutes.


(Other vegetables could be chopped and added—such as celery or spinach leaves.)

I wanted to make an old-fashioned tuna casserole, but did not want to used canned soup so this is what I came up with.  It was a wonderful flash to the past.
