My version of turkey loaf
Bell peppers cut into rings
Grated cheese of your choice
Set the bell pepper rings on a baking sheet.
Fill each with a mound of turkey loaf mixture.
Bake in pre-heated oven (175 C or 350 F) for about 25 minutes.
Top with grated cheese and bake an additional 5 minutes to melt cheese.

YUMMY TUNA CASSEROLE
- Pasta to make about 1 1/2 cups when cooked
- 1 Small Carrot chopped and steamed
- 1/2 Bell Pepper chopped
- 1/2 Onion sliced into thin rings (or chopped)
- 1 small zucchini chopped
- 1 can tuna
- 1/2 cup mayonnaise
- 1/3 cup yogurt (or sour cream)
- 1 cup shredded cheese
- 1/3 cup seasoned bread crumbs
- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of salted water to a boil, add pasta, and cook until al dente; drain.
- Mix all ingredients. topping with cheese then bread crumbs.
- Bake uncovered for 25-30 minutes.
(Other vegetables could be chopped and added—such as celery or spinach leaves.)
I wanted to make an old-fashioned tuna casserole, but did not want to used canned soup so this is what I came up with. It was a wonderful flash to the past.
